Comforting Calzones

Due to a client request, I made calzones yesterday. I started by making my homemade pizza dough. The dough is 2 1/2 cups of 00 flour, .25 oz of yeast, a teaspoon of honey and a touch of olive oil. Then, I made the filling comprised of my homemade ricotta, Cheddar cheese, pepperoni, and mushrooms.


Do you know what the difference between a panzerotti and a calzone? They look virtually identical. The difference is that a panzerotti is fried while a calzone is baked in the oven. While a calzone is made of pizza dough, it is not baked at the super high temperature of a pizza which I bake at 550 degrees for 5-10 minutes: calzones are baked at 375 degrees for approximately 30 minutes. The result is a beautifully browned crust. Enjoy!
