Well, do I have a great idea for you. Over the weekend, I made a pan of lasagna; however, I had some meat ingredients left over. The meat included hot Italian sausage, ground beef, garlic, hot chili pepper, and San Marzano tomatoes. For lunch, I defrosted some of my homemade beef stock, added some noodles and the left over lasagna meat ingredients. It was a hit! For that matter, I could have even taken a few slices of my fully cooked lasagna, chopped it up and added it to my beef stock. It results in a robust, satisfying soup for lunch. Serve it with some baked bread sticks and it is a meal! Enjoy!
