I am a fan of meatloaf and really enjoy it in the form of cupcakes. It makes a darling presentation and is not overwhelming like a huge pan of meatloaf can be, in my opinion. For these cupcakes, I used ground chuck with onions, pickles, jack and cheddar cheeses. I glaze them with a combination of ketchup and hot sauce.
As a topping, I make garlic mashed potatoes with a touch of sour cream. The final touch is a beautiful cherry tomato on top. Enjoy!
