Smashed Potatoes

I love to discover different ways to make one of my favorite sides - potatoes! For smashed potatoes, I use any kind of potato that I have in the kitchen. Today, I used baby red potatoes. First, I boil them until soft enough to smash. Second, I smash them with a masher. Third, I mix them with a generous amount of high quality extra virgin olive oil, season with salt and pepper and roast them at 375 for twenty or so minutes until nicely browned and crunchy around the rims. Add some grated Parmigiano-Reggiano and a touch of fresh herbs and Enjoy!
